Click here to add text.Here’s a new favorite recipe I wanted to share -My family loves meat loaf, but it can be time consuming on a busy evening – so I can’t tell you how excited I was to discover that you can make a wonderful meatloaf in your crock pot!
Here’s what you’ll need:
2 1/4 pounds of lean ground beef or 1 ¼ pounds ground beef and 1 pound ground turkey
or ground pork - mixed
1/4 cup ketchup or small can of tomato paste – a family preference thing………
2 tablespoon brown sugar
1 egg
1 cup breadcrumbs or crushed crackers
2 tablespoon Worcestershire sauce
1 large carrot finely diced or shredded
½ red or yellow bell pepper finely diced - they are a bit more mild than the green
1/4 cup water
Mix all ingredients in a large bowl – a great way to hide more vegetables in the meal is to finely chop them and mix them into the ingredients, such as the carrots and peppers noted in this recipe – you can do this with other vegetables as well –
Cut a strip of foil – doubled in half for added strength – it needs to be large enough to go under and up around the sides of the meatloaf in crock pot. Cut it long enough to cover the bottom and sides of meatloaf – but not over the top. Form into a meatloaf shape that will fit into your crock pot – do not smash it down to fill the bottom of the pot snugly.
Place meat loaf in crock pot – I like to set into the foil first then put it in the pot.
Optional: top with additional 2 tablespoons ketchup, or tomato sauce or bacon strips
Cover and cook on low for approximately 8 hours.
Serve with fresh tossed salad, chunky homemade applesauce and hot rolls and what a great mid-week dinner!
